- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 2 teaspoons smoked paprika
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce (adjust for spice)
- 1 tablespoon freshly squeezed lemon juice
- 2 green onions, chopped
Instructions
- Rinse shrimp under cold water and pat dry.
- Set up three bowls: one with flour mixed with salt and paprika, one with beaten eggs, and one with panko breadcrumbs.
- Dip each shrimp into flour, shake off excess, then coat in egg before rolling in panko until fully covered.
- Heat oil in a skillet over medium-high heat. Fry shrimp in batches until golden brown (3-4 minutes per side).
- In a bowl, mix mayonnaise, sriracha, lemon juice, and green onions until smooth.
- Toss fried shrimp in the sauce until evenly coated and serve immediately.
