- 1 lb baby potatoes
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C). Wash and cut baby potatoes into bite-sized pieces.
- In a large bowl, mix potatoes with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
- Spread evenly on a parchment-lined baking sheet. Bake for 25-30 minutes until golden brown and crispy, stirring halfway through.
- Remove from the oven and sprinkle fresh herbs on top while hot. Serve immediately.
