- 4 boneless, skinless chicken breasts
- 1 cup finely grated cheddar cheese
- 1 cup panko breadcrumbs
- 2 teaspoons garlic powder
- 2 eggs (beaten)
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In one bowl, whisk the eggs until frothy. In another bowl, mix panko breadcrumbs with garlic powder, salt, and pepper.
- Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture, pressing firmly to adhere.
- Generously sprinkle grated cheddar cheese over each breaded piece.
- Place the chicken in the prepared baking dish and bake for 25-30 minutes or until golden brown and cooked through (internal temperature of 165°F / 74°C).
- Let rest briefly before garnishing with fresh parsley and serving hot with your favorite sides.
