  • 4 boneless, skinless chicken breasts
  • 8 slices of deli ham
  • 8 slices of Swiss cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 cup all-purpose flour
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C). Set up three shallow dishes with flour, beaten eggs, and panko breadcrumbs.
  2. Flatten each chicken breast to about half an inch thick using a meat mallet.
  3. Place slices of ham and cheese in the center of each flattened chicken breast. Roll them tightly.
  4. Dredge each roll in flour, dip in eggs, then coat with panko breadcrumbs.
  5. Heat olive oil or butter in a skillet over medium heat. Cook the rolls seam-side down until golden brown on all sides (about 3-4 minutes per side).
