- 4 boneless, skinless chicken breasts
- 8 slices of deli ham
- 8 slices of Swiss cheese
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1 cup all-purpose flour
- 2 tbsp olive oil or butter
Instructions
- Preheat your oven to 375°F (190°C). Set up three shallow dishes with flour, beaten eggs, and panko breadcrumbs.
- Flatten each chicken breast to about half an inch thick using a meat mallet.
- Place slices of ham and cheese in the center of each flattened chicken breast. Roll them tightly.
- Dredge each roll in flour, dip in eggs, then coat with panko breadcrumbs.
- Heat olive oil or butter in a skillet over medium heat. Cook the rolls seam-side down until golden brown on all sides (about 3-4 minutes per side).
- Transfer to a baking dish and bake for about 20 minutes or until internal temperature reaches 165°F (75°C).
