Instructions
- 1. Marinate the Chicken: In a bowl or resealable bag, combine buttermilk with salt and spices. Add chicken pieces and marinate for at least 2 hours or overnight.
- 2. Prepare the Coating: In another bowl, mix flour and cornstarch with additional seasonings.
- 3. Dredge the Chicken: Remove chicken from marinade and coat thoroughly in flour mixture. For extra crunch, double dip by returning to buttermilk then back into the flour.
- 4. Heat Oil: In a deep skillet or fryer, heat oil to 350°F (175°C).
- 5. Frying Time: Carefully fry chicken pieces for 8-10 minutes on each side until golden brown and cooked through.
- 6. Drain Excess Oil: Place fried chicken on a wire rack over paper towels to drain before serving.
