- 1 lb fresh fish fillets (cod or haddock)
- 1 cup all-purpose flour
- 2 tbsp cornstarch
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup canola or vegetable oil for frying
- Salt and pepper to taste
Instructions
- Prepare your workspace with bowls for flour, eggs, and breadcrumbs, along with paper towels for draining.
- Rinse fish fillets under cold water and pat dry. Season both sides with salt and pepper.
- In one bowl, mix flour and cornstarch. In another bowl, beat the eggs. Place panko breadcrumbs in a third bowl.
- Dredge each fillet in flour, dip in eggs, then coat with breadcrumbs.
- Heat oil in a deep skillet over medium-high heat until shimmering (about 350°F).
- Fry the fillets for 4-5 minutes per side until golden brown and crispy.
- Transfer fried fish to paper towels to drain excess oil and serve hot with lemon wedges or tartar sauce.
