  • 1 lb fresh fish fillets (cod or haddock)
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup canola or vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. Prepare your workspace with bowls for flour, eggs, and breadcrumbs, along with paper towels for draining.
  2. Rinse fish fillets under cold water and pat dry. Season both sides with salt and pepper.
  3. In one bowl, mix flour and cornstarch. In another bowl, beat the eggs. Place panko breadcrumbs in a third bowl.
  4. Dredge each fillet in flour, dip in eggs, then coat with breadcrumbs.
  5. Heat oil in a deep skillet over medium-high heat until shimmering (about 350°F).
  6. Fry the fillets for 4-5 minutes per side until golden brown and crispy.
  7. Transfer fried fish to paper towels to drain excess oil and serve hot with lemon wedges or tartar sauce.
