- 4 medium starchy potatoes (such as Russets), peeled and diced
- 2 medium sweet onions, thinly sliced
- 4 tbsp vegetable oil or olive oil
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 1 tsp fresh thyme or rosemary (optional)
Instructions
- Wash and dice the potatoes into bite-sized pieces. Peel if desired.
- Slice the onions thinly into half-moon shapes for even cooking.
- Heat oil in a large skillet over medium heat until shimmering.
- Add the diced potatoes and fry until golden brown and crispy, about 10 minutes.
- Stir in the sliced onions and continue cooking for another 5-7 minutes until tender and caramelized.
- Season with salt and pepper to taste before serving hot.
