Instructions
- Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Cut potatoes into 1-inch cubes for even cooking.
- In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and herbs until well-coated.
- Spread the seasoned potatoes in a single layer on the baking sheet.
- Roast for 30-35 minutes, stirring halfway through, until golden brown and crispy.
- Serve warm for the best taste.
