- 4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup plain or Italian-seasoned breadcrumbs
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
- In one bowl, whisk eggs until frothy. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, and oregano.
- Dip each chicken breast into the egg mixture, then coat thoroughly in the breadcrumb mixture.
- Place the coated chicken on a greased baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
