- 2 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup seasoned breadcrumbs (panko recommended)
- 4 cloves fresh garlic, minced
- 1/2 cup heavy cream
- 2 tbsp butter
- 2 tbsp chopped parsley
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper.
- Set up a breading station: one bowl with flour seasoned with salt and pepper, one with beaten eggs, and another with breadcrumbs mixed with Parmesan.
- Dredge each chicken breast in flour, dip in egg, then coat well in the breadcrumb-Parmesan mixture.
- Place breaded chicken in the prepared baking dish and drizzle lightly with olive oil. Bake for 25-30 minutes until golden brown.
- While baking, melt butter in a saucepan over medium heat; sauté garlic until fragrant. Slowly whisk in heavy cream until combined.
- Stir in parsley just before serving.
