  • 2 boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup seasoned breadcrumbs (panko recommended)
  • 4 cloves fresh garlic, minced
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp chopped parsley
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. Set up a breading station: one bowl with flour seasoned with salt and pepper, one with beaten eggs, and another with breadcrumbs mixed with Parmesan.
  4. Dredge each chicken breast in flour, dip in egg, then coat well in the breadcrumb-Parmesan mixture.
  5. Place breaded chicken in the prepared baking dish and drizzle lightly with olive oil. Bake for 25-30 minutes until golden brown.
  6. While baking, melt butter in a saucepan over medium heat; sauté garlic until fragrant. Slowly whisk in heavy cream until combined.
  7. Stir in parsley just before serving.
