- 1 (14.75 oz) can of salmon, drained
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- Salt & pepper to taste
- 2 tbsp fresh dill, chopped (optional)
- 2 tbsp cooking oil (olive or vegetable)
Instructions
- In a mixing bowl, flake the drained salmon with a fork.
- Add breadcrumbs, eggs, Dijon mustard, lemon juice, salt, pepper, and dill (if using). Mix until combined but moist.
- Shape about 1/4 cup of the mixture into patties, about 1 inch thick.
- Heat oil in a skillet over medium heat until shimmering.
- Fry patties for 4-5 minutes on each side until golden brown and heated through.
- Drain on paper towels and serve warm with lemon wedges or your favorite dipping sauce.
