Ingredients

  • 1 (14.75 oz) can of salmon, drained
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • Salt & pepper to taste
  • 2 tbsp fresh dill, chopped (optional)
  • 2 tbsp cooking oil (olive or vegetable)

Instructions

  1. In a mixing bowl, flake the drained salmon with a fork.
  2. Add breadcrumbs, eggs, Dijon mustard, lemon juice, salt, pepper, and dill (if using). Mix until combined but moist.
  3. Shape about 1/4 cup of the mixture into patties, about 1 inch thick.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Fry patties for 4-5 minutes on each side until golden brown and heated through.
  6. Drain on paper towels and serve warm with lemon wedges or your favorite dipping sauce.
