- 1 lb baby Yukon Gold or red potatoes
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- ½ tsp freshly cracked black pepper
- 1 tbsp fresh parsley or rosemary, chopped
- ½ tsp garlic powder
Instructions
- Wash the baby potatoes thoroughly and place them in a large pot. Cover with water and add salt.
- Bring to a boil over high heat and simmer until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool for 5 minutes.
- On a parchment-lined baking sheet, gently smash each potato using a fork or potato masher until flattened but intact.
- Drizzle with olive oil and sprinkle with garlic powder, salt, pepper, and fresh herbs.
- Preheat your oven to 450°F (230°C) and bake for 20-25 minutes until golden brown and crispy.
