 - 2 tbsp harissa paste
 - 1/2 cup mayonnaise
 - 1 tsp garlic powder
 - Salt and pepper to taste
 - 1 tsp smoked paprika (optional)
 
Instructions
- Preheat your oven to 425°F (220°C).
 - Wash, peel, and cut sweet potatoes into uniform fry-shaped pieces.
 - In a large bowl, toss sweet potato fries with olive oil, salt, pepper, garlic powder, and smoked paprika until well coated.
 - Line a baking sheet with parchment paper and arrange fries in a single layer.
 - Bake for 25-30 minutes, flipping halfway through until golden brown and crispy.
 - While fries bake, mix harissa paste with mayonnaise in a small bowl; adjust spiciness to preference.
 - Serve hot with harissa mayo for dipping.
