  • 1 cup panko breadcrumbs

  • 2 tbsp extra virgin olive oil

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into long strips about half an inch thick.
  3. In a bowl, whisk together olive oil, garlic powder, salt, and pepper. In another bowl, combine panko breadcrumbs and Parmesan cheese.
  4. Dip each zucchini strip in the oil mixture, then coat with the breadcrumb blend.
