Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis into long strips about half an inch thick.
- In a bowl, whisk together olive oil, garlic powder, salt, and pepper. In another bowl, combine panko breadcrumbs and Parmesan cheese.
- Dip each zucchini strip in the oil mixture, then coat with the breadcrumb blend.
- Arrange the coated fries on a parchment-lined baking sheet in a single layer.
- Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
- Allow to cool slightly before serving with your favorite dipping sauce.
