- 4 cups fresh celery (chopped)
- 1 cup red bell pepper (thinly sliced)
- 1 cup carrots (shredded)
- 1/2 cup green onions (sliced)
- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds (toasted)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey (or maple syrup)
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables: celery, red bell pepper, carrots, and green onions.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- In a large mixing bowl, combine chopped celery, red bell pepper slices, shredded carrots, sliced green onions, cranberries, and sunflower seeds.
- Drizzle the dressing over the vegetable mixture and toss gently until evenly coated.
- Chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
