  • 34 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 12 large eggs
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil or melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry the chicken breasts.
  3. Set up a breading station with flour seasoned with salt and pepper in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
  4. Dredge each chicken breast in flour, dip into the egg, then coat with panko breadcrumbs.
  5. Heat olive oil or butter in a skillet over medium heat. Cook chicken for 4-5 minutes on each side until golden brown.
  6. Transfer browned chicken to a baking sheet lined with parchment paper and bake for 15-20 minutes until the internal temperature reaches 165°F (75°C).
