- 3 large eggs (room temperature)
- 1 cup whole milk
- ½ cup unsalted butter (melted)
- 2 cups heavy cream (for whipping)
- 1 cup sour cherries (pitted)
- Dark chocolate shavings (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, whisk the eggs until frothy; then stir in the milk and melted butter.
- Gradually combine the wet mixture with the dry ingredients until no lumps remain.
- Divide the batter between the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- Allow the cakes to cool in their pans for 10 minutes before transferring to wire racks.
- Whip heavy cream until stiff peaks form; add powdered sugar and vanilla extract to taste.
- Assemble by layering one cake with whipped cream and cherries, topping with the second cake layer, remaining whipped cream, and chocolate shavings.
- Chill for at least an hour before serving.
