  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 1 cup whole milk
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for topping)
  • 1 cup semi-sweet chocolate chips
  • 3.4 oz vanilla pudding mix

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream softened butter until fluffy. Gradually add sugar, beating until light.
  4. Beat in eggs one at a time along with vanilla extract until smooth.
  5. Alternate adding dry ingredients and milk to wet mixture; mix until just combined.
  6. Divide batter into pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans before transferring to wire racks.
  7. Prepare custard by heating milk and pudding mix according to package instructions until thickened.
  8. Assemble pie: place one cake layer on a plate, spread half of the custard over it, and top with the second layer.
  9. For ganache, heat heavy cream to simmering point and pour over chocolate chips; stir until smooth. Pour over assembled cake.
  10. Chill in the refrigerator for at least an hour before serving.
