- 200g dark chocolate (70% cocoa)
- 4 large eggs (separated)
- 100g granulated sugar
- 300ml heavy cream (cold)
- 1 tsp vanilla extract
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth.
- In a separate bowl, whisk egg yolks with sugar until pale and fluffy (3-4 minutes).
- Gradually combine melted chocolate with the egg yolk mixture while whisking continuously.
- In a clean bowl, whip egg whites until stiff peaks form and fold gently into the chocolate mixture.
- Fold in whipped cream until just combined.
- Spoon mousse into serving dishes and refrigerate for at least 2 hours to set.
