- 16 oz (450g) full-fat cream cheese, room temperature
- 1 cup (200g) granulated sugar
- 3 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 tbsp instant coffee granules dissolved in ¼ cup warm water
- 1 cup (100g) graham cracker crumbs
- ½ cup (113g) unsalted butter, melted
Instructions
- Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan.
- In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time until fluffy.
- Stir in the dissolved coffee and vanilla extract until well combined.
- Pour the filling over the crust and bake for 55-60 minutes until edges are set but center jiggles slightly.
- Turn off the oven, crack open the door slightly, and let cool for an hour before transferring to a wire rack to cool completely.
- Cover with plastic wrap and refrigerate for at least four hours or overnight before serving.
