Ingredients

  • 16 oz (450g) full-fat cream cheese, room temperature
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 2 tbsp instant coffee granules dissolved in ¼ cup warm water
  • 1 cup (100g) graham cracker crumbs
  • ½ cup (113g) unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time until fluffy.
  4. Stir in the dissolved coffee and vanilla extract until well combined.
  5. Pour the filling over the crust and bake for 55-60 minutes until edges are set but center jiggles slightly.
  6. Turn off the oven, crack open the door slightly, and let cool for an hour before transferring to a wire rack to cool completely.
  7. Cover with plastic wrap and refrigerate for at least four hours or overnight before serving.
