- 2 ripe avocados (about 400g)
- 1 cup cherry tomatoes, halved (150g)
- 1 small cucumber, diced (200g)
- 1/4 red onion, thinly sliced (30g)
- Juice of 1 lemon (30ml)
- 2 tbsp olive oil (30ml)
- Salt and pepper to taste
- 1/4 cup fresh cilantro or parsley, chopped (15g)
Instructions
- Wash all vegetables thoroughly. Halve the avocados, remove the pit, and scoop out the flesh. Cut into bite-sized chunks.
- Dice the cherry tomatoes and cucumber; thinly slice the red onion.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- In a large mixing bowl, combine avocado chunks with diced vegetables. Pour the dressing over the salad and gently toss to coat.
- Add freshly chopped cilantro or parsley on top and give it one last gentle toss.
