Ingredients

  • 2 ripe avocados (about 400g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1 small cucumber, diced (200g)
  • 1/4 red onion, thinly sliced (30g)
  • Juice of 1 lemon (30ml)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro or parsley, chopped (15g)

Instructions

  1. Wash all vegetables thoroughly. Halve the avocados, remove the pit, and scoop out the flesh. Cut into bite-sized chunks.
  2. Dice the cherry tomatoes and cucumber; thinly slice the red onion.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. In a large mixing bowl, combine avocado chunks with diced vegetables. Pour the dressing over the salad and gently toss to coat.
  5. Add freshly chopped cilantro or parsley on top and give it one last gentle toss.
