- 1 lb lean ground beef
 - 8 oz fresh button mushrooms, sliced
 - 1 medium onion, finely chopped
 - 2 cloves garlic, minced
 - 1 cup low-sodium beef broth
 - 1 cup sour cream
 - 8 oz egg noodles
 - 2 tbsp olive oil
 - Salt and pepper to taste
 
Instructions
- Prep your ingredients by chopping the onion and garlic and slicing the mushrooms.
 - In a large skillet, heat olive oil over medium heat. Sauté onions until translucent (3-4 minutes).
 - Add ground beef, breaking it apart as it cooks until browned; season with salt and pepper.
 - Stir in mushrooms and cook until they release moisture and brown.
 - Pour in beef broth, bring to a simmer, then reduce heat. Mix in sour cream until well combined.
 - Cook egg noodles according to package instructions; drain.
 - Combine noodles with the sauce mixture, adding reserved pasta water if needed for desired consistency.
