- 1 cup black beans (canned or cooked from dried)
- 1 cup long grain white rice
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 tsp cumin
- 2 tbsp olive oil
- Salt & pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- Prepare your ingredients by finely chopping the onion and garlic.
- In a large pot over medium heat, heat olive oil and sauté onions until translucent. Add minced garlic and cook for an additional minute.
- Stir in black beans and rinsed rice, mixing well to combine.
- Pour in vegetable broth and add cumin, salt, and pepper. Bring to a boil, then reduce heat to low and let simmer until rice is tender (about 15-20 minutes).
- Once cooked, remove from heat and squeeze fresh lime juice over the mixture. Fluff gently with a fork before garnishing with cilantro if desired.
