- 4 large flour tortillas
- 6 large eggs
- 4 oz bacon or sausage, cooked until crispy
- 1 cup bell peppers, chopped (red/green)
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- ½ cup salsa (mild or spicy)
- 1 ripe avocado (optional)
Instructions
- Chop bell peppers and onions; gather all ingredients.
- In a skillet over medium heat, cook bacon/sausage until crispy. Add onions and bell peppers; sauté for 5–7 minutes.
- Beat eggs with salt and pepper; pour into the skillet with meat and vegetables. Cook until fluffy.
- Sprinkle cheese on top of the egg mixture; add salsa to taste.
- Lay a tortilla flat, spoon filling onto one side, fold in sides, and roll tightly.
- Serve hot or wrap for later.
