Ingredients

  • 6 large eggs
  • 4 oz bacon or sausage, cooked until crispy
  • 1 cup bell peppers, chopped (red/green)
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (mild or spicy)
  • 1 ripe avocado (optional)

Instructions

  1. Chop bell peppers and onions; gather all ingredients.
  2. In a skillet over medium heat, cook bacon/sausage until crispy. Add onions and bell peppers; sauté for 5–7 minutes.
  3. Beat eggs with salt and pepper; pour into the skillet with meat and vegetables. Cook until fluffy.
  4. Sprinkle cheese on top of the egg mixture; add salsa to taste.
  5. Lay a tortilla flat, spoon filling onto one side, fold in sides, and roll tightly.
  6. Serve hot or wrap for later.
