Instructions
- Gather all ingredients; chop bell peppers and cilantro while scrambling eggs in a bowl.
- In a skillet over medium heat, cook ground sausage until browned (5-7 minutes).
- Add beaten eggs to the skillet with sausage and cook until fluffy (3-4 minutes).
- Lay out each tortilla; spoon equal portions of the egg-sausage mixture onto each along with bell peppers and cheese.
- Fold in the sides of each tortilla and roll tightly from one end to another.
- Serve warm or wrap in foil for later enjoyment.
