  • 2 cups frozen hashbrowns
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (red or yellow)
  • 1/2 cup onion, chopped
  • 1/2 pound breakfast sausage (mild or spicy)
  • 1/2 cup whole milk (or almond milk)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the breakfast sausage until fully cooked; drain excess fat.
  3. Sauté chopped onions and bell peppers in the same skillet until tender.
  4. In a bowl, whisk together eggs and milk. Stir in cooked sausage, sautéed veggies, salt, pepper, and half of the shredded cheese.
  5. Layer hashbrowns evenly in the baking dish; pour egg mixture over the top. Sprinkle remaining cheese on top.
  6. Bake for 35-40 minutes until golden brown and bubbly. Allow cooling for 5 minutes before serving.
