- 8 oz pasta (fettuccine or penne)
- 1 lb boneless chicken thighs (diced)
- 4 cloves minced fresh garlic
- 1 cup grated parmesan cheese
- 2 tbsp unsalted butter
- 1 cup low-sodium chicken broth
- Fresh parsley (for garnish)
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside.
- In a skillet, melt butter over medium heat. Add chicken and season with salt and pepper; cook until golden brown (6-8 minutes).
- Stir in minced garlic and sauté until fragrant (about 1 minute).
- Pour in chicken broth; bring to a simmer. Stir in parmesan cheese until melted.
- Combine cooked pasta with the sauce in the skillet, tossing gently to coat.
- Serve hot, garnished with additional parmesan cheese and parsley.
