Ingredients
- 1 cup brown rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, sliced
- 2 cups romaine lettuce, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup sour cream or Greek yogurt
- ½ cup salsa (mild, medium, or hot)
Instructions
- In a medium saucepan, combine brown rice with 2 cups of water. Bring to a boil, then cover and simmer on low for about 45 minutes until tender.
- While the rice cooks, heat black beans in a small saucepan over medium heat for 5-7 minutes until warmed through.
- Dice cherry tomatoes and chop romaine lettuce while the rice and beans cook.
- In a large bowl, layer cooked rice at the bottom followed by black beans, cherry tomatoes, lettuce, avocado slices, shredded cheese, salsa, and sour cream.
- Dig in and savor each flavorful bite!
