  • 1 cup brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 2 cups romaine lettuce, chopped
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa (mild, medium, or hot)

Instructions

  1. In a medium saucepan, combine brown rice with 2 cups of water. Bring to a boil, then cover and simmer on low for about 45 minutes until tender.
  2. While the rice cooks, heat black beans in a small saucepan over medium heat for 5-7 minutes until warmed through.
  3. Dice cherry tomatoes and chop romaine lettuce while the rice and beans cook.
  4. In a large bowl, layer cooked rice at the bottom followed by black beans, cherry tomatoes, lettuce, avocado slices, shredded cheese, salsa, and sour cream.
