Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix cooled mashed potatoes, melted butter, and eggs until smooth.
- Stir in cheddar cheese and green onions.
- Fill each muffin cup three-quarters full with the mixture using an ice cream scoop.
- Combine panko breadcrumbs with remaining melted butter and sprinkle over muffins.
- Bake for 20-25 minutes until golden brown.
