  • 8 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups fresh spinach, chopped
  • 1 cup bell peppers (any color), diced
  • ½ cup whole milk (or almond milk for dairy-free)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 tsp dried thyme (or oregano)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, sauté the bell peppers and spinach in olive oil until tender, about 5 minutes.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and dried herbs until well combined.
  4. Stir half of the shredded cheddar into the egg mixture.
  5. Pour the egg mixture into the greased baking dish and top with the remaining cheddar cheese.
  6. Bake for 25-30 minutes or until golden brown on top and set in the center.
