- 3–4 boneless, skinless chicken breasts
- 1 lb fresh asparagus, trimmed
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- Juice of 1 lemon (optional)
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Rinse the asparagus under cold water and trim the ends. Cut the chicken into bite-sized pieces.
- In a bowl, combine the chicken pieces with olive oil, salt, pepper, and minced garlic. Toss to coat thoroughly.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown on all sides (about 6-8 minutes).
- Once the chicken is nearly cooked through, add the asparagus to the skillet. Sauté together for an additional 4-5 minutes until the asparagus is tender but still crisp.
- For extra flavor, squeeze fresh lemon juice over the dish or sprinkle with Parmesan cheese just before serving.
