- 1 lb boneless, skinless chicken breasts, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 inch fresh ginger, grated
- 2 green onions, chopped
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Prep your ingredients by cubing the chicken and slicing the bell peppers and broccoli.
- In a large skillet or wok over medium-high heat, add sesame oil until shimmering.
- Add the chicken and sauté until golden brown (5-7 minutes).
- Toss in the bell peppers and broccoli; stir-fry for another 3-4 minutes until tender-crisp.
- In a small bowl, whisk the soy sauce, garlic, ginger, cornstarch mixture, and any desired spices.
- Pour the sauce over the stir-fry and toss to coat; cook for an additional minute until thickened.
