- 1 lb boneless, skinless chicken breasts (about 3–4 breasts)
- 1 cup bell peppers (mixed colors), sliced
- 1 cup broccoli florets
- 1 cup carrots, thinly sliced
- 3 cloves fresh garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 tsp cornstarch
- 2 tbsp cooking oil
Instructions
- Prep your ingredients by chopping the chicken into bite-sized pieces and slicing the vegetables.
- In a bowl, combine chicken with soy sauce, minced garlic, and cornstarch. Allow marination for about 15 minutes.
- Heat oil in a large skillet over medium-high heat. Sauté marinated chicken until golden brown.
- Add the sliced vegetables to the pan and stir-fry until tender-crisp.
- Pour in additional soy sauce mixed with sesame oil during the last few minutes of cooking for extra flavor.
- Serve hot, garnished with sesame seeds or fresh herbs if desired.
