- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 1 cup low-sodium chicken broth
- 2 tsp cumin
- 2 tsp chili powder
- 8 tortillas (flour or corn)
- 1 cup tomato sauce
- 2 tbsp freshly squeezed lime juice
- ¼ cup fresh cilantro, chopped
Instructions
- Gather ingredients and prepare by chopping onion and mincing garlic.
- Sauté onion and garlic in a skillet over medium heat until soft.
- Place chicken breasts in the crockpot and sprinkle with cumin and chili powder.
- Pour chicken broth and tomato sauce over the seasoned chicken; stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot and mix with juices before serving in warm tortillas topped with lime juice and cilantro.
