Instructions
- Rinse chickpeas under cold water until clean. Chop bell peppers, cucumber, and red onion into bite-sized pieces.
- In a large bowl, combine chickpeas, chopped veggies, and herbs. Squeeze lemon juice over the mixture and drizzle with olive oil.
- Gently mix all ingredients until evenly coated; season with salt and pepper to taste.
- Lay out tortillas or lettuce leaves on a flat surface. Spoon the chickpea mixture onto each wrap.
- Roll tortillas tightly or fold lettuce like tacos. Secure with toothpicks if needed.
