- 1 cup brown rice
- 1 can (15 oz) black beans, drained and rinsed
- 2 chipotle peppers in adobo sauce, chopped (adjust to taste)
- 2 tbsp fresh lime juice
- 1 ripe avocado, diced
- 1 cup salsa (your choice)
- 1 lb grilled chicken or tofu
- ¼ cup chopped cilantro
- ½ cup sour cream or Greek yogurt (optional)
- ½ cup shredded cheese (optional)
- 1 cup chopped tomatoes or corn (optional)
Instructions
- Rinse the brown rice under cold water until clear. In a saucepan, combine rice with 2 cups of water. Bring to a boil, cover, and simmer on low heat for about 45 minutes until fluffy.
- While the rice cooks, season your protein (chicken or tofu) with salt, pepper, garlic powder, and cumin. Grill chicken for about 6-7 minutes per side or sauté tofu until golden.
- In a small saucepan over medium heat, warm black beans with chopped chipotle peppers and lime juice until heated through.
- Assemble your bowls by layering brown rice at the bottom, followed by black beans, grilled protein, diced avocado, salsa, and fresh lime juice. Top with cilantro and optional toppings.
