- 4 slices baguette

Instructions
- In a large pot over medium heat, melt butter. Add sliced onions and caramelize for about 30 minutes until golden brown.
- Deglaze the pot with cognac or sherry, scraping the bottom to incorporate flavors; simmer for 5 minutes.
- Stir in beef broth, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for an additional 20 minutes.
- Toast baguette slices until golden brown.
- Ladle soup into oven-safe bowls, place toasted baguette on top, and cover with grated cheese. Broil until bubbly (about 3-5 minutes).
