Instructions

- In a bowl, whisk together eggs and milk until blended.
- Fold in bell peppers, spinach, and bacon or sausage.
- Season with salt and pepper.
- Pour the mixture into the muffin cups until about ¾ full.
- Bake for 20 minutes or until puffed up and golden brown.
- Let cool slightly before serving.
