  • Salt and pepper to taste

Instructions

  1. Soak chickpeas in cold water overnight; drain and rinse.
  2. In a food processor, blend chickpeas with parsley, onion, garlic, cumin, coriander, baking soda, salt, and pepper until crumbly.
  3. Let the mixture rest for 30 minutes to meld flavors.
  4. Form into small balls or patties (about 1-2 inches).
  5. Heat oil in a pan over medium heat (around 350°F) and fry falafel until golden brown on all sides (approximately 3-4 minutes each side).
  6. Drain on paper towels and serve hot with tahini sauce or in pita bread.
