  • 1 cup fresh parsley leaves
  • 2 tsp ground cumin
  • 3 garlic cloves, minced
  • 4 tbsp tahini paste
  • 4 pita breads or tortillas
  • 1 cup mixed fresh vegetables (cucumbers, lettuce, tomatoes)
  • Juice of 1 lemon
  • Salt to taste
  • Oil for frying

Instructions

  1. In a food processor, combine chickpeas, parsley, cumin, minced garlic, and salt. Pulse until a coarse mixture forms.
  2. Shape the mixture into small balls or patties (1-2 inches in diameter).
  3. Heat oil in a pan over medium heat. Fry falafel for 4-5 minutes per side until golden brown or bake at 375°F for 25-30 minutes.
  4. For the tahini sauce, whisk together tahini paste, lemon juice, garlic powder, water, and salt until smooth.
  5. Lay out pita bread or tortillas; fill with falafel and mixed vegetables. Drizzle with tahini sauce before wrapping.
