- 1 can (15 oz) chickpeas, drained and rinsed
 - 1 cup fresh parsley leaves
 - 2 tsp ground cumin
 - 3 garlic cloves, minced
 - 4 tbsp tahini paste
 - 4 pita breads or tortillas
 - 1 cup mixed fresh vegetables (cucumbers, lettuce, tomatoes)
 - Juice of 1 lemon
 - Salt to taste
 - Oil for frying
 
Instructions
- In a food processor, combine chickpeas, parsley, cumin, minced garlic, and salt. Pulse until a coarse mixture forms.
 - Shape the mixture into small balls or patties (1-2 inches in diameter).
 - Heat oil in a pan over medium heat. Fry falafel for 4-5 minutes per side until golden brown or bake at 375°F for 25-30 minutes.
 - For the tahini sauce, whisk together tahini paste, lemon juice, garlic powder, water, and salt until smooth.
 - Lay out pita bread or tortillas; fill with falafel and mixed vegetables. Drizzle with tahini sauce before wrapping.
