- 6 large eggs
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- ½ cup feta cheese, crumbled
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In an oven-safe skillet, heat olive oil over medium heat. Add spinach and cherry tomatoes; sauté until the spinach wilts and tomatoes soften slightly.
- In a bowl, whisk together eggs with salt and pepper until frothy.
- Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir in the crumbled feta cheese.
- Bake in the preheated oven for 20-25 minutes or until set and lightly browned on top.
- Allow to cool slightly before slicing into wedges. Serve warm or at room temperature.
