- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Prepare the ingredients by chopping the chicken into bite-sized pieces.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add chicken bites and cook until golden brown (5-7 minutes), flipping halfway through.
- Add minced garlic and sauté for an additional minute until fragrant.
- Pour in the heavy cream, stirring gently while scraping up any bits from the bottom. Let simmer for 3-4 minutes until slightly thickened.
- Stir in cooked pasta and fresh spinach, mixing well for about 2-3 minutes until heated through.
- Remove from heat and add Parmesan cheese until melted; season with salt and pepper to taste.
