- 3–4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 4 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon turmeric
- Mixed greens or lettuce
- Chopped tomatoes and cucumbers
- Hummus or tahini sauce
Instructions
- Marinate the chicken by whisking yogurt, lemon juice, garlic, cumin, coriander, paprika, turmeric, salt, and pepper in a bowl. Coat chicken and let marinate for at least 1 hour.
- Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until internal temperature reaches 165°F (75°C).
- Allow the grilled chicken to rest for 5 minutes before slicing into strips.
- Assemble your bowl by layering mixed greens, sliced chicken, chopped tomatoes, cucumbers, and drizzling with hummus or tahini sauce.
