  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1 cup fresh corn kernels
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh cilantro (chopped)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Prepare the shrimp marinade by mixing olive oil, lime juice, cumin, paprika, garlic powder, salt, and pepper in a bowl. Add shrimp and marinate for at least 30 minutes.
  2. In another bowl, mix diced avocado, corn kernels, cilantro, lime juice, salt, and pepper to create the corn salsa.
  3. Preheat your grill to medium-high heat. Thread marinated shrimp onto skewers and grill for about 3-4 minutes on each side until pink and slightly charred.
  4. For the creamy sauce, whisk together sour cream (or Greek yogurt) with lime juice and a pinch of salt until smooth.
  5. Assemble your bowl by placing grilled shrimp as the base topped with corn salsa and drizzled with creamy sauce.
