- 1 lb large shrimp (peeled and deveined)
- 2 ripe avocados (diced)
- 1 cup fresh corn kernels
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh cilantro (chopped)
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup sour cream or Greek yogurt
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Prepare the shrimp marinade by mixing olive oil, lime juice, cumin, paprika, garlic powder, salt, and pepper in a bowl. Add shrimp and marinate for at least 30 minutes.
- In another bowl, mix diced avocado, corn kernels, cilantro, lime juice, salt, and pepper to create the corn salsa.
- Preheat your grill to medium-high heat. Thread marinated shrimp onto skewers and grill for about 3-4 minutes on each side until pink and slightly charred.
- For the creamy sauce, whisk together sour cream (or Greek yogurt) with lime juice and a pinch of salt until smooth.
- Assemble your bowl by placing grilled shrimp as the base topped with corn salsa and drizzled with creamy sauce.
