- 1 lb lean ground beef
- 1 cup long-grain rice, rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cups shredded sharp cheddar cheese
- 1 cup mixed vegetables (bell peppers or peas)
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped onions and minced garlic; sauté until fragrant.
- Stir in the rinsed rice and diced tomatoes. Mix thoroughly to coat the rice.
- Add your choice of vegetables along with paprika, oregano, salt, and pepper; stir well.
- Pour the mixture into the greased baking dish and top with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake an additional 10-15 minutes until golden brown.
