  • 1 cup long-grain rice, rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups shredded sharp cheddar cheese
  • 1 cup mixed vegetables (bell peppers or peas)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped onions and minced garlic; sauté until fragrant.
  3. Stir in the rinsed rice and diced tomatoes. Mix thoroughly to coat the rice.
  4. Add your choice of vegetables along with paprika, oregano, salt, and pepper; stir well.
  5. Pour the mixture into the greased baking dish and top with shredded cheddar cheese.
  6. Cover with foil and bake for 30 minutes. Remove the foil and bake an additional 10-15 minutes until golden brown.
