  • 1 cup cooked rice (white or brown)
  • 1 cup tomato sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, heat a splash of oil. Sauté onions and garlic until translucent (about 3-4 minutes).
  3. Add ground turkey, cumin, and paprika; cook until browned (5-7 minutes). Season with salt and pepper.
  4. In a mixing bowl, combine cooked rice and tomato sauce; add the turkey mixture and stir until well combined.
  5. Stuff each bell pepper generously with the mixture and place them upright in a baking dish.
  6. Cover with foil and bake for 25 minutes. Remove foil, top with cheese, then bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
