Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin with nonstick spray.
- In a bowl, whisk together the eggs, salt, and pepper until well combined.
- Stir in the diced ham, shredded cheese, chopped bell peppers, and green onions.
- Fill each muffin cup about three-quarters full with the egg mixture.
- Bake for 20-25 minutes, or until golden brown and puffed up.
- Let cool for a few minutes before removing from the tin.
