Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cups mixed greens (spinach and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ red onion, thinly sliced
  • 1 ripe avocado, sliced
  • ½ cup Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or oven to 375°F (190°C). Season chicken breasts with salt and pepper; cook until golden brown and cooked through (about 20-25 minutes).
  2. While the chicken cooks, chop mixed greens into bite-sized pieces. Dice cucumber and slice cherry tomatoes and red onion.
  3. In a bowl, combine Greek yogurt, lemon juice, olive oil, salt, and pepper. Mix until smooth.
  4. Once cooked, let chicken cool before chopping it into cubes.
  5. In a large bowl, combine mixed greens, chopped veggies, chicken cubes, and drizzle with dressing. Toss gently until well-coated.
  6. Serve in bowls or plates garnished with avocado slices.
