- 3–4 boneless, skinless chicken breasts
- 4 cups mixed greens (spinach and arugula)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ red onion, thinly sliced
- 1 ripe avocado, sliced
- ½ cup Greek yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or oven to 375°F (190°C). Season chicken breasts with salt and pepper; cook until golden brown and cooked through (about 20-25 minutes).
- While the chicken cooks, chop mixed greens into bite-sized pieces. Dice cucumber and slice cherry tomatoes and red onion.
- In a bowl, combine Greek yogurt, lemon juice, olive oil, salt, and pepper. Mix until smooth.
- Once cooked, let chicken cool before chopping it into cubes.
- In a large bowl, combine mixed greens, chopped veggies, chicken cubes, and drizzle with dressing. Toss gently until well-coated.
- Serve in bowls or plates garnished with avocado slices.
