 - 1/2 medium cucumber, sliced
 - 1/2 bell pepper (red or yellow), sliced
 - 1/2 cup shredded carrots
 - 1 cup fresh spinach
 - 1 tbsp fresh lemon juice
 - Salt and pepper to taste
 
Instructions
- Gather all ingredients on a clean surface for easy assembly.
 - Spread hummus evenly over the entire tortilla.
 - Layer cucumber, bell pepper, and shredded carrots down the center of the tortilla.
 - Add spinach and drizzle with lemon juice. Season with salt and pepper.
 - Fold in the sides of the tortilla and roll tightly from one end.
 - Slice diagonally and serve immediately or pack for later.
