  • 1 lb lean ground beef (80% lean)
  • 1 cup fresh breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • 1 tsp salt
  • ½ tsp black pepper
  • 28 oz canned whole peeled tomatoes

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, garlic, Parmesan cheese, parsley, egg, salt, and pepper. Mix until just combined.
  2. Lightly wet your hands and shape the mixture into meatballs (about 1 tablespoon each) and set aside.
  3. Heat olive oil in a skillet over medium heat and sear meatballs in batches until golden brown (4-5 minutes).
  4. Remove meatballs and add crushed tomatoes to the skillet; season with salt and pepper.
  5. Return meatballs to the sauce and simmer on low heat for about 20 minutes until cooked through.
  6. Serve over spaghetti or as a sub with garnishes if desired.
